- 2 cups sifted all purpose flour
- 3 tablespoons herb De Provence
- 1.5 teaspoons baking powder
- 3/4 teaspoon fine sea salt
- 1/2 cup (1 stick) unsalted butter - room temp
- 1/4 cup (2 oz) goat cheese - room temp
- 3 tablespoons sugar
- 2 eggs, beaten at room temp

Preparation
Step 1
Oven rack in center, pre-heat oven to 350.
Line cookie sheet with parchment paper
Whisk flour, herbes De Provence, baking powder and salt in a medium bowl. Set aside
In a stand mixer with a paddle attachment, beat butter and goat cheese until smooth.
Beat in the sugar and eggs to the butter and goat cheese mixture.
In batches add in the flour mixture and beat just until combined.
Transfer dough to cookie sheet and with damp hands form the log - 13 inches long and 3 inches wide.
Bake at 350 F for 30 minutes or until golden brown.
Cool on baking sheet for 30 minutes
Transfer loaf to cutting board, cut on diagonal with serrated knife at 1/3 to 3/4 inches thick
Arrange cookie, cut side down on baking sheet and bake an additional 15 minutes at 350.
Let cool for 30 minutes on wire rack.
