Meditteranean Roll-ups

Ingredients
- 1 1/2 cups dices Roma tomatoes
- a 1/2 tsp salt (divided)
- 1 1/2 cups shredded dry pack feta cheese
- 2 Tbsp slivered fresh mint
- 1/2 tsp fresh ground pepper
- 1/4 tsp paprika
- 1 can chickpeas (rinsed and drained)
- 1/4 cup tahini
- 4 cloves garlic (peeled and minced)
- 1/3 cup olive oil
- 1/4 cup fresh lemon juice
- 6 small flour tortillas

Step 1
Combine tomatoes and 1 tsp of the salt in a sieve over a bowl. Let stand 30 minutes. Discard liquid. Combine tomotoes, feta, mint, pepper and paprika. Set aside.
In food processor, combine chickpeas, tahini, garlic, olive oil and lemon juice. Process untill smooth.
Spread mixture on tortillas leaving 1/2 inch border. Sprinkle tomatoes over. Roll up tortillas. Wrap each individually in plastic wrap. Refrigerate at least 4 hours and up to 24 hours.
To serve: trim edges and slice in pinwheels. Garnish tray with gresh mint.
