- 1/4 c. maple syrup
- 3 tbsp. minced shallots (about 1 medium)
- 2 tbsp red wine vinegar
- 1 tbsp canola oil
- 1 tbsp country-style Dijon mustard
- 1/4 tsp salt
- 1/4 tsp freshly ground pepper
- 1 garlic clove, minced
- 1 cup sliced mushrooms
- 1/2 c. vertically sliced red onion
- 1/2 c. chopped Braeburn apple
- 4 slices bacon, cooked and crumbled
- 1 (10-oz) pkg fresh spinach
