Ingredients

  • Prawn Marinade:
  • 2 pounds large raw shrimp, shelled and deveined
  • 2 slices ginger root, the size of a quarter, smashed with the flat side of a cleaver
  • 1 1/2 T sake
  • 1/2 t salt
  • Seasonings:
  • 2 T minced scallions
  • 1 1/2 T minced garlic
  • 1 T minced ginger root
  • 1 1/2 t chili paste
  • Prawn Sauce:
  • 6 T water
  • 5 T ketchup
  • 2 T rice wine or sake
  • 1 1/2 T sugar
  • 1 1/2 t cornstarch
  • 1/2 t salt

Step 1

Rince shrimp lightly, drain thoroughly, pat dry. Holding cleaver or chef's knife parallel to the cutting board, score prawns along back so they will "butterfly" when cooked.

Place prawns in a mixing bowl, add the marinade, toss lightly and let marinate for 20 min. Drain prawns and disgard the ginger root.

Heat wok, add 2 T of oil and heat until very hot. Add minced seasonings and stir-fry for about 10 seconds, until fragrant. Add chili paste and stir-fry for about 5 seconds over high heat.

Add prawns and cook about 1 min, then add the prawn sauce and stir until it begins to thicken. Toss lightly and transfer mixture to a platter. Serve.
