- 1 cup melted chocolate
- 1 cup chopped peanuts

Toast waffles according to package instructions.
Dip one half of each waffle into melted chocolate and place on a parchment lined baking sheet. Sprinkle with chopped peanuts and allow to sit until chocolate hardens.
To assemble the sandwiches, turn two waffles over so they are peanut-side down. Add a scoop of ice cream to each. Place the remaining waffles, peanut-side up on top of the ice cream to create sandwiches.
Wrap each sandwich is plastic wrap or parchment paper and place in freezer until ready to eat.
Tips: Replace the peanuts with your favorite ice cream topping such as sprinkles.
