Zucchini and Onion Gratin

- 2 tablespoons olive oil, divided
- 1 large onion, quartered lengthwise and thinly sliced
- 1 tablespoon tomato paste
- 2 teaspoons grated lemon rind
- 1 teaspoon fresh thyme leaves
- 3/8 teaspoon kosher salt, divided
- 1/4 teaspoon freshly ground black pepper
- 1 1/2 pounds zucchini, diagonally sliced into 1/4-inch-thick pieces
- 1 ounce Parmesan cheese, grated (about 1/4 cup)
Salmon Cakes

Flake the cooked cooled salmon with a fork
- Vegetable or canola oil, for frying
- 3 (6-ounce) portions cooked salmon or 3 (6-ounce) cans salmon, drained well
- 1 1/2 cups cracker meal
- 2 large eggs, beaten
- 2 rounded teaspoons Old Bay seasoning blend
- 1/2 red bell pepper, seeded and finely chopped
- 20 blades fresh chives, snipped or chopped
- 2 to 3 tablespoons fresh dill, a handful, finely chopped
- 1 teaspoon cayenne pepper sauce
- 1 lemon, zested and juiced
- Salad greens
- Coarse salt
- Extra-virgin olive oil, for drizzling
- 1/2 cup mayonnaise or reduced fat mayonnaise
- 1/2 cup chili sauce
- 2 tablespoons dill pickle relish
- Directions
- Heat a large, heavy skillet with 1 inch of frying oil over moderate heat.
Baked Chicken Breasts with Dijon-White Wine Sauce and Haricots Verts

- 2 teaspoons olive oil
- 2 (6-ounce) skinless, boneless chicken breast halves
- 3/8 teaspoon freshly ground black pepper, divided
- 1/4 teaspoon kosher salt, divided
- 1/4 cup finely diced carrot
- 2 tablespoons thinly sliced shallots
- 1 teaspoon chopped fresh thyme
- 2 garlic cloves, chopped
- 1/4 cup dry white wine
- 1/3 cup unsalted chicken stock (such as Swanson)
- 1 tablespoon unsalted butter, divided
- 1 teaspoon Dijon mustard
- 1/2 pound haricots verts or green beans, trimmed
K.C. Masterpiece BBQ Sauce

Combine all ingredients in a sauce pan and mix well
- 2 cups water
- 3/4 cup light corn syrup
- 1/2 cup tomato paste
- 1/2 cup white vinegar
- 3 Tbls. molasses
- 3 Tbls. brown sugar
- 1 teas. liquid smoke
- 1/2 teas. salt
- 1/4 teas. onion powder
- 1/4 teas. black pepper
- 1/8 teas. garlic powder
Orange-Sesame Pork with Napa Slaw

- 4 cups thinly sliced napa (Chinese) cabbage
- 4 (1/4-inch) diagonally cut green onions
- 2 navel oranges, divided
- 2 tablespoons dark sesame oil, divided

- 1 tablespoon lower-sodium soy sauce, divided
- 1/2 teaspoon crushed red pepper, divided
- 1 1/2 tablespoons oyster sauce
- 1 tablespoon cornstarch
- 1/4 teaspoon freshly ground black pepper
- 1 pound boneless center-cut loin pork chops, cut into 1/4-inch-thick slices

- 1 1/2 (6-inch) whole-wheat pitas, cut into 11 wedges

- 2 tablespoons chopped red onion
