1. Whisk honey, vinegar, mint, pepper and salt in a small bowl
- 1/4 cup honey
- 2 tablespoons sherry vinegar or red-wine vinegar
- 2 tablespoons finely chopped fresh mint
- 1/4 teaspoon freshly ground pepper
- Pinch of salt
- 4 cups baby spinach
- 1 small avocado (4-5 ounces), peeled, pitted and cut into 16 slices

- 1 cup Panko*

- 18 oz. fresh fettucine, cooked, drained and piping hot
- Aproximately 3/4 cup pasta water

- Sauce:
- 1 1/2 cups water
- 2 tablespoons orange juice
- 1 cup packed dark brown sugar
- 1/2 cup rice vinegar
- 2 1/2 tablespoons soy sauce
- 1/4 cup lemon juice
- 1/2 teaspoon fresh ginger, minced
- 1 large clove garlic, minced
- 1 teaspoon chopped green onion
- 1/2 teaspoon crushed red pepper flakes
- 2 tablespoons cornstarch
- 3 tablespoons water
- Chicken
- 4 boneless/skinless chicken breasts, thawed and cut into bite size chunks
- 1 cup ice water
- 1 egg
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups unsifted flour
- 2-4 cups vegetable oil

In a medium bowl, combine the flour, baking powder and salt
- For the cookies:
- 4 1/2 cups all-purpose flour
- 4 1/2 teaspoons baking powder
- 3/4 teaspoon salt
- 1 1/2 cups unsalted butter, at room temperature
- 1 1/2 cups sugar
- 3 large eggs
- 5 teaspoons vanilla extract
- For the frosting:
- 5 cups confectioners' sugar, sifted
- 1/3 cup (5 1/3 Tablespoons) unsalted butter, melted
- 1 Tablespoon vanilla extract
- 7 Tablespoons milk (plus more, as needed)
- Food coloring, optional
- Sprinkles (optional)

Sift in a bowl the two flours collect to the center the yeast melted with honey and part of the water
- FOR THE DOUGH
- 150 g Manitoba flour
- 150 g durum wheat flour
- 100 g natural yeast
- 220 g warm water
- 1 tbsp olive oil
- 1 tbsp honey
- 8 g salt
- TO FILL THE PIZZA
- olive oil
- 250 g peeled tomatoes
- 1 Mozzarella cheese
- salt
- oregano
Healthy Baked Chicken Nuggets

Chunks of all white meat chicken breasts coated in breadcrumbs and parmesan cheese then baked until golden
- 16 oz (2 large) skinless boneless chicken breasts, cut into even bit sized pieces
- salt and pepper to taste
- 2 tsp olive oil
- 6 tbsp whole wheat Italian seasoned breadcrumbs
- 2 tbsp panko
- 2 tbsp grated parmesan cheese
- olive oil spray (I used my Misto)
