Awesome Homemade Granola

1 - Preheat oven to 275. 2 - In a small saucepan, bring the canola oil, syrup, cinnamon and water to a simmer
- 1/3 c. canola oil
- 8 T. grade B maple syrup
- 1 tsp. cinnamon
- 2 T. water
- 4 c. old fashioned oats
- 4 T. brown sugar
- 1/2 tsp. salt
- 4 T. ground flaxseed
- 2/3 c. coconut
- 2/3 c. sliced almond (or your favorite nut/seed)
- 2/3 raisins (or your favorite dried fruit)
Mocha Meringue Bark

Preheat the oven to 250 degrees F
- 1/2 cup blanched slivered almonds, divided
- 1 teaspoon sugar, plus 1/4 cup
- 4 egg whites
- Pinch salt
- 1 tablespoon instant espresso powder
- 1/3 cup mini chocolate chips
Greek Grilled Chicken Platter

Place chicken in a shallow dish or a large Ziploc bag
- Marinade/Dressing:
- 12 pita breads
- 2 - 3 # chicken cutlets
- 1 pkg. dried Italian dressing mix
- 2 lemons, zested and juiced
- 3 - 4 T. red wine vinegar
- 1/4 c. EVOO
- 1/4 c. white wine
- 2 T. dried oregano
- 3 garlic cloves, chopped
- Salad Platter (amounts are suggestions):
- 4 hearts Romaine, chopped
- 1 c. pitted Kalamata olives
- 12 oz. feta cheese, crumbled
- 4 vine ripe tomatoes
- 1 English cucumber, diced
- 1 chopped bell pepper, any color
- 1 red onion, chopped
- 1 bunch flat leaf parsley, chopped
Ginger Duck

1. The day before, stuff the duck with the onion and celery
- 1 * 1 duck (thawed overnight in the refrigerator), giblets removed
- 1 * 1 onion, peeled and cut in half, or 3 shallots, peeled
- 2 * 2 stalks celery, cut into 3-inch long pieces
- 2 * 2 teaspoons ground ginger
- 1/2 * 1/2 cup sugar
- 1/2 * 1/2 cup soy sauce
- 1 * 1 teaspoon sea salt

- 3 pounds corned beef brisket with spice packet
- 2 carrots, cut into 2-inch pieces
- 2 medium onions, chopped
- 2 cups apple juice
- 1 cup water
- POTATOES:
- 1 1/2 pounds baby red potatoes, sliced in 1/2
- 1/2 stick butter, softened
- 1 tablespoon garlic, chopped
- 2 tablespoons fresh parsley leaves, chopped
- Salt and freshly ground black pepper
Mixed Apple Bread

Preheat oven to 350. Spray 2 loaf pans with non stick spray
- Topping:
- 3 large eggs
- 2 c. sugar
- 1 c. vegetable oil
- 1 tsp. vanilla
- 3 c. all-purpose flour
- 1 tsp. baking soda
- 1 tsp. salt
- 4 c. grated apples, any kind, use a mix
- 1/2 c. sugar
- 1 T. cinnamon
- 2 tsp. flour
- 1/4 c. butter
- 1/2 c. brown sugar
- 1/2 tsp. - 1 tsp. cinnamon
Blueberry Boy Bait (adapted from Cook's Country)

For the cake: Adjust oven rack to middle position and heat oven to 350 degrees
- Cake:
- If using frozen blueberries, do not let them thaw, as they will turn the batter a blue-green color.
- 2 cups all-purpose flour plus 1 teaspoon
- 1 tablespoon baking powder
- 1 teaspoon table salt
- 16 tablespoons unsalted butter (2 sticks), softened
- 3/4 cup packed light brown sugar
- 1/2 cup granulated sugar
- 3 large eggs
- 1 cup whole milk
- 3/4 cup blueberries , fresh or frozen, (see note above)
- Topping:
- 3/4 cup blueberries , fresh or frozen (see note above)
- 1/4 cup granulated sugar
- 1/3 cup brown sugar
- 1/2 teaspoon ground cinnamon
Vegetarian Egg Fried Rice

Heat a wok or a large saute pan over high heat
- optional garnishes:
- 3 c. cooked white rice
- 2 T. peanut oil
- 2 leeks, white part only, chopped roughly and rinsed
- 3 eggs, beaten
- 2 garlic cloves, minced
- 3 T. light soy sauce
- 2 T. dark sesame oil
- 1 tsp.ginger powder
- 2 green onions, sliced thin
- Sriracha Hot Chili Sauce, to taste (or your favorite hot sauce)

Arroz Con Pollo

Heat 3 Tbsp olive oil in a large skillet (a skillet that has a cover) on medium high heat
- Chicken:
- 3 Tbsp olive oil
- 2 1/2 to 3 pounds of chicken thighs or breasts, bone-in, with skin on, rinsed and patted dry
- 1/2 cup of flour for dredging
- Salt
- Freshly ground black pepper
- Paprika
- Rice:
- 2 tablespoons olive oil (can use up to 1/4 cup)
- 2 medium yellow onions, chopped
- 1 chopped bell pepper, any color
- 3 garlic cloves, minced
- 2 cups of medium or long-grain white rice
- 4 cups chicken stock
- 1 heaping tablespoon tomato paste or 1 cup of diced fresh or cooked tomatoes, strained
- Pinch of oregano
- kosher salt, to taste
