Maple Baked Beans (courtesy of Ina Garten)

Place the beans in a large bowl and cover with cold water by 1-inch and cover with plastic wrap
- 1 pound dry red kidney beans
- 2 quarts water
- 1 large yellow onion, cut in eighths
- 1 bay leaf
- 6 whole black peppercorns
- 3/4 cup medium amber pure maple syrup
- 1/2 cup light brown sugar, lightly packed
- 1/2 cup ketchup
- 1 tablespoon Chinese chili paste
- 1 tablespoon grated fresh ginger
- 1 teaspoon kosher salt
- 5 ounces thick-cut smoked bacon, cubed
Chocolate Banana Cream Pie

Combine chocolate, 1 T. milk and butter in a medium bowl
- 1 (9 inch) deep dish pie crust, baked and cooled
- 4 oz. semi sweet chocolate chips
- 1 T. milk
- 1 T. butter
- 2 bananas, sliced
- 1 1/2 c. cold milk
- 1 (3.5oz) pkg. vanilla instant pudding or banana cream instant pudding
- 1 1/2 c. shredded coconut, toasted
- 1 1/2 c. Cool Whip
Sweet Basil Roasted Tomatoes

Preheat oven to 400. Arrange tomatoes on a sheet pan, cut side up, in a single layer
- 2 pints cherry tomatoes, cut in half
- 1/4 c. EVOO
- 2 T. aged balsamic vinegar
- 2 large garlic cloves, minced
- 2 tsp. sugar
- kosher salt and fresh ground pepper, to taste
- 10 large basil leaves, chopped
Spanakopitas (adapted from Ina Garten)

Preheat the oven to 375 degrees F
- 1/4 cup good olive oil
- 2 chopped yellow onions
- 3 scallions, white and green parts, chopped
- 2 (10-ounce) packages frozen chopped spinach, defrosted
- 4 extra-large eggs, lightly beaten
- 3 tablespoons freshly grated Parmesan cheese
- Plain dry bread crumbs
- 1 teaspoon grated nutmeg
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 2 cups small-diced feta cheese (12 ounces)
- 3 tablespoons toasted pine nuts
- 24 sheets frozen phyllo dough, defrosted
- 1/4 pound (1 stick) unsalted butter, melted
- Flaked sea salt, such as Maldon, for sprinkling
Sausage Calzones

Preheat oven to 425 F. Brown sausage in a small skillet in a drizzle of olive oil
- 1 1/3 pounds raw Italian sweet sausage, casing removed
- A drizzle olive oil
- 2 cups ricotta
- A handful flat leaf parsley, chopped
- 2 cloves garlic, chopped
- A handful grated Parmigiano, plus extra, for knots
- 1/4 teaspoon nutmeg, freshly grated or a couple pinches of ground
- A few grinds black pepper
- 2 tablespoons chopped pimento
- 2 (10-ounce) tubes prepared pizza dough
- 2 cups shredded mozzarella
- Garlic oil (1 or 2 cloves chopped and heated in 1/2 cup extra-virgin olive oil)
- 2 cups tomato, marinara or pizza sauce for dipping or Five Minute Spicy Marinara, recipe follows
Sweet & Sour Lentils from Deb Greene

Sauté onions in approx. 2 T
- 1/4 c. Tamari or Soy Sauce
- 1 large or 2 small bay leaves
- 3 T. Onion powder
- 1/2 c. vegetable oil
- 3/4 c. honey
- 1/2 c. red wine vinegar
- 1 tsp. Allspice
- 1/2 tsp. powdered ginger
- 4 c. water
- 3 c. lentils-rinsed
- 4 - 5 large onions, chopped and sautéed until dark brown
Chocolate Pudding (adapted from Tyler's Ultimate)

Put 1 1/2 cups of the milk, the sugar, and the cocoa in a nonreactive saucepan
- Optional:
- 2 cups whole milk
- 1/2 cup sugar
- 1/3 cup natural cocoa powder
- 4 teaspoons cornstarch
- 3 large egg yolks
- 2 teaspoons pure vanilla extract
- 1/4 teaspoon fine salt
- 3/4 cup whipping cream
Simple Chicken Marsala

In a shallow dish, mix together flour, salt, pepper and oregano
- 1/4 c. all-purpose flour
- 1/2 tsp. kosher salt
- 1/4 tsp. fresh ground pepper
- 1/2 tsp. dried oregano
- 4 chicken cutlets, pounded 1/4 inch thick
- 4 T. butter
- 4 T. EVOO
- 2 c. sliced mushrooms
- 1/2 c. Marsala wine
- 1/4 c. cream sherry
- 1/4 c. heavy cream
Roasted Vegetable Soup

Preheat the oven to 300 F
- Optional garnishes:
- 1 large sweet onion, peeled
- 1 large red onion, peeled
- 3 carrots, peeled
- 3 medium sweet potatoes, peeled
- 1 medium butternut squash, peeled and seeded
- 2 red bell peppers, deseeded
- 5 plum tomatoes, deseeded, and cut into quarters
- 1 head garlic
- 2 - 3 tablespoon olive oil
- 2 sprigs fresh rosemary
- 7 c. chicken stock
- kosher salt and fresh ground black pepper, to taste
- non-fat, plain Greek yogurt
- homemade croutons
- crusty bread
Horseradish Cheddar Beer Soup

In a heavy stockpot over medium-high heat, heat olive oil for 60 seconds
- 3 tablespoons olive oil
- 2 cups (1 large) chopped onion
- 2 tablespoons minced garlic
- 8 tablespoons all-purpose flour
- 6 cups vegetable stock
- 1 (15-ounce) can roasted red peppers, drained and finely chopped
- 2 (12-ounce) bottles beer
- 3 cups (3/4 pound) sharp cheddar cheese
- 2 tablespoons prepared horseradish
- Salt and pepper
- Chopped parsley, for garnish
