Apple Almond Coffee Cake (From Mom)

Mix together all dry ingredients with margarine until it crumbs, add milk, eggs and vanilla and almond extract
- 3 Medium size Granny Smith Apples sliced thin
- 2 cups all purpose flour
- 1 cup sugar
- 2 1/2 teaspoons baking powder
- 1/4 teaspoon of salt
- 1/2 cup (one stick) of softened margarine chunked
- 1/2 cup milk
- 2 large eggs
- 1 1/2 teaspoons vanilla extract
- 1/4 teaspoon almond extract
- Buy a jar of apple jelly (I use almost the whole jar (3/4); usually only one size jar in the store)
- 1/2 cup of sliced almonds (or to your taste)

- 1/4 cup butter
- 1/4 cup light brown sugar
- 3 tbsp milk

- 3 mashed bananas (ripe)
- 1/3 cup applesauce
- 2 cups oats
- 1/4 cup almond milk
- 1/2 cup raisins (optional)
- 1 tsp. vanilla

- 5 1/2 cups cooked spaghetti squash (from about 2 small)
- 1 tbsp butter
- 1 tbsp olive oil
- 1/4 cup minced onion
- 1/4 cup flour (use 2 tbsp corn starch for gf)
- 2 cups skim milk
- 1 cup fat free chicken broth (vegetable broth for vegetarian)
- 8 oz Sargento 2% reduced fat mild cheddar
- salt and pepper, to taste
- 4 cups (about 4 oz) baby spinach
- 1/8 cup grated parmesan
