Chicken Parisienne

1) Place chicken breasts skin side up in a baking dish
- 4 large or 6 medium chicken breasts, boned
- 10 oz can mushroom soup
- 13 oz can mushrooms and liquid
- 1 cup sour cream
- 1/2 cup cooking sherry
- Paprika
Wilted Spinach Salad

1) Cook bacon, drain and crumble
- 8 slices bacon
- 2 tb bacon drippings
- 8 cups spinach, hard stems removed
- 3 hard cooked eggs, grated
- 2 green onions, chopped
Apple Caramel Mousse

1) Start by cooking the apples: In a heavy skillet, melt 2 tbs butter
- The Apples:
- 2 tbs butter, unsalted
- 4-5 medium golden delicious apples, peeled, cored and quartered
- 1/2 tsp cinnamon
- 1/2 cup plus 1 tbs granulated sugar
- pinch of freshly grated nutmeg
- 2 tbs water
- The Custard:
- 4 egg yolks
- 1 tsp cornstarch
- 1/3 cup sugar
- 1-1/2 cups milk, warm
- 1 pkg gelatin, unflavoured
- 1 tsp vanilla extract
- 1 cup heavy cream, whipped
- The Sauce:
- 1 cup apricot preserves
- 2 tbs lemon juice
- 1 tsp lemon grind, grated
- 1/3 cup apricot brandy
- 2 tbs confectioners sugar
Halibut, Baked

1) Preheat oven to 425 F. Combine nuts and parmesan
- 1/2 cup pine nuts, chopped
- 4 tb freshly grated parmesan
- 3 tb mayo
- 1-6 oz halibut filets
- 2 tb basil, finely chopped
- 1 clove garlic, chopped
- sea salt and pepper to taste
Shortbread

1) Mix butter and sugar to dissolve sugar (will be light in color)
- 8 oz butter
- 4 oz sugar
- 1 oz almonds, finely ground
- 2 eggs
- 1 lb pastry flour
Smoked Salmon Rounds

1) Combine first 5 ingredients
- 4 oz smoked salmon
- 1 oz sour cream
- 1 oz cream cheese, softened
- 1 tsp fresh dill weed, chopped (or 1/2 tsp dried dill)
- pinch of salt and white pepper
- 10-12 melba rounds
Baked Italian Rice

1) Preheat the oven to 400 degrees and put the stock in a pot on the stove to warm slowly
- 6 cups rich chicken stock
- 4 tb (1/2 stick) unsalted butter
- 1 medium onion, finely chopped
- 2 cups Arborio rice
- 1/2 cup dry white wine
- Salt to taste
- 3 eggs, lightly beaten
- 6 oz Gruyere cheese, coarsely grated
Drumstick Canapes

1) Cut wings in half at joint
- 3 lbs (about 15) small chicken wings
- 1/2 cup sugar
- 3 tb cornstarch
- 1/2 tsp salt
- 1/2 tsp ground ginger
- 1/4 tsp pepper
- 2/3 cup water
- 1/3 cup lemon juice
- 1/4 cup soya sauce
Easy Porkchop Casserole

1) Trim fat from chops and grease the bottom of a large skillet with it
- 4 thick loin pork chops
- salt and pepper
- 3/4 cup long-grain rice
- 1 (1 lb) can sliced baby tomatoes
- 1/4 tsp oregano
- 1 large green pepper
- 1 large onion
- 2 slices bacon
- 1/2 cup beef broth (canned or bouillon cube)
Bean Italian soup Zuppa di Fagioli

Serves 4 to 6
- 1 cup dry white beans (Great Norhern, navy, white kidney)
- 2 to 2 1/2 quarts water
- 1/2 lb. cooked smoked ham,(2 cups)cut in 1/4 inch cubes
- 1/2 cup finely chopped onions
- 1/4 cup finely chopped celery
- 1/2 tsp. finely chopped garlic
- 2 T. olive oil
- 1/4 lb. lean salt pork in one piece
- 1 1/2 tsp. salt
- freshly ground pepper
- 1/2 cup of 1-inch pieces of spaghetti
- freshly grated imported Parmesan cheese
