- 1/3 to 1/2 About 1/3 to 1/2 cup breadcrumbs
- 1 large clove garlic, grated or pasted
- 1 egg, beaten
- 1/4 cup grated Parmigiano-Reggiano cheese
- 2 tablespoons EVOO- Extra Virgin Olive Oil
- 1 small head escarole, chopped

- Baked Rice Pudding
- Preparation Time: 5 minutes (cooked rice needed)
- Cooking Time: 35 minutes
- Servings: 4-6
- 3 cups cooked brown rice
- 1 1/2 cups soy or rice milk
- 1 cup dried fruit
- 3 teaspoons brown sugar
- 1 1/2 teaspoons vanilla
- dash cinnamon
PEACH COBBLER

Preheat the oven to 325 degrees F
- 4 cups sliced peeled fresh peaches (4 to 5 peaches)
- 1 cup all-purpose flour
- 1 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- 1/2 cup milk
- 4 tablespoons (1/2 stick) unsalted butter, melted
- 1 tablespoon cornstarch
- 1/2 cup boiling water
- Serving suggestions: vanilla ice cream or whipped cream, optional
Vegetarian Bubble Pizza

Preheat oven to 375 degrees
- 1 16.3 oz. can large flaky biscuits (I used Pillsbury’s Grands.)
- 1 large green bell pepper, diced
- 1 8 oz. pkg. button mushrooms, sliced
- 2 Tbsps. olive oil
- 1 24 oz. jar pasta sauce (I used Barilla’s Spicy Marinara.)
- 1 4.25 oz. can sliced black olives
- 2 cups shredded mozzarella cheese
FRIED RICE

On medium high heat, heat the oil in a large skillet or wok
- 3 cups cooked white rice (day old or leftover rice works best!)
- 3 tbs sesame oil
- 1 cup frozen peas and carrots (thawed)
- 1 small onion, chopped
- 2 tsp minced garlic
- 2 eggs, slightly beaten
- 1/4 cup soy sauce

PORK CHOPS W/ ONION GRAVY

- 2 quarts cider plus 1/2 cup for gravy

- 1/4 cup kosher salt
- 1/4 cup brown sugar
- 1 star anise
- 1 strip orange rind studded with 2 or 3 cloves
- 1 small onion, quartered
- 5 to 6 peppercorns
- 5 to 6 juniper berries, optional
- 8 to 10 cups ice, optional
- 6 to 8 large, bone-in pork chops
- Flour for dredging plus 4 tablespoons
- 3 to 4 tablespoons vegetable or olive oil
- 4 tablespoons butter
- 6 medium onions, sliced
- 1 large bay leaf
- Salt and pepper
- 1/4 cup brandy, Calvados or dry sherry, optional
- 1 quart chicken stock
CHICKEN WITH MUSTARD SAUCE
