Mexican Rice

- 2 cups long grain rice
- 3 T Olive oil
- 2 cloves garlic, slightly crushed with blade of knife
- 3 shallots chopped (finely diced)
- 1 small onion, chopped (finely diced)
- 1 med Serrano pepper, (finely diced)
- 1 T tomato paste or 3 T tomato sauce
- 1 tsp cumin
- 1/2 tsp black pepper
- 2 tsp salt
- 1 qt chicken stock
- 1 tsp tamarind paste
- Cilantro stems and leaves
Rachel Ray’s Gravy

Melt butter in pan over medium heat
- 5 5 5 tablespoons butter
- Cracked black pepper
- 4 4 4 tablespoons flour
- 1 1 1 tablespoon ground poultry seasoning, a scant palmful
- 1 1 1 quart stock-in-a-box, turkey or chicken
- 2 2 2 tablespoons Kitchen Gourmet or other browning sauce
- 2 2 2 beaten egg yolks
- 1 to 2 1 to 2 2 cups pan drippings, fat skimmed or separated
Thai Chicken Curry

Heat oil in a preheated wok on high heat
- 1 Tbsp oil
- 1 lb chicken cut into small pieces
- 14 oz coconut milk
- 3 Tbsp red or green Thai curry paste (Mae Ploy is good)
- 6 scallions, chopped
- 3 Tbsp cilantro, chopped
- 1-1 1/2 Tbsp cornstarch with 2 Tbsp water (optional for thickening)
- Heat oil in a preheated wok on high heat.
- Add a little coconut milk and curry paste to mix Add chicken until
- chicken is almost cooked.
- Add the rest of the coconut milk, cook until chicken is done (15 min) If
- you like a thicker sauce, mix the cornstarch with water and add slowly
- until desired consistancy Add cilantro and scallions Serve with rice.
Mama Mia Marinara

- 6 cloves garlic, peeled

Sharon’s Clam Chowder

Fry bacon till crisp. Remove from grease and drain on paper towel
- 1 1 1 medium onion (minced)
- 2 2 2 stalks celery (minced)
- 6-8 6-8 1” slices bacon cut in 1” pieces
- 1-2 1-2 1-2 cloves garlic (minced)
- 1 1 1 box frozen corn
- 2-3 2-3 2-3 cans chopped clams
- 2 2 2 cans whole white potatoes cut into bite sized pieces
- 4 4T 4T flour
- 4 4T 4T butter
- milk or cream
- Fry bacon till crisp. Remove from grease and drain on paper towel. Fry celery and onion in bacon grease, add garlic when almost done.
- In deep stock pot add celery and onion mixture, bacon, corn, clams with liquid, and potatoes with liquid.
Emeril's ESSENCE Creole Seasoning

(also referred to as Bayou Blast):
- 2 1/2 tablespoons paprika
- 2 tablespoons salt
- 2 tablespoons garlic powder
- 1 tablespoon black pepper
- 1 tablespoon onion powder
- 1 tablespoon cayenne pepper
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- Combine all ingredients thoroughly.
- Yield: 2/3 cup

- 4 Pounds lean ground beef
- 2 teaspoons minced garlic
- 1 tablespoon ground cumin
- 3-4 tablespoon chili powder
- 1/3 cup flour
- 2 teaspoons salt
- 1/2 teaspoons pepper
- 1 46 oz can tomato juice
Banana Nut Bread

My grandson Matt and I used to make this recipe
- 1 1/4 cups mashed bananas
- 1 cup sugar
- 2 T butter
- 2 T sour milk
- 1 egg, beaten
- 2 cups flour (Can use half oat bran)
- I tsp baking soda
- 1/4 tsp salt
- 1/2 tsp baking powder
- 1 cup chopped nuts
- Sift dry ingredients. Cream sugar and butter, add egg, bananas and sour milk. Add dry ingredients and nuts. Mix well Pour into greased loaf pan. Bake at 375o for 50 min.
