Sugar Cookie Fruit Pizzas

For glaze, in a small saucepan, combine the sugar, cornstarch, pineapple juice, water and lemon juice until smooth
- 1/2 cup sugar
- 1 tablespoon cornstarch
- 1/2 cup unsweetened pineapple juice
- 1/4 cup water
- 2 tablespoons lemon juice
- 4 ounces cream cheese, softened
- 1/4 cup confectioners' sugar
- 1-3/4 cups whipped topping
- 12 sugar cookies (3 inches)
- 1 cup fresh blueberries
- 1 cup chopped peeled kiwifruit
- 1/2 cup chopped fresh strawberries
Turkey and Stuffing Meatloaf

Preheat oven to 400 degrees F
- 2 McIntosh or Gala apples, peeled and cut into small dice
- 1 tablespoon lemon juice
- 2 pounds ground all white turkey (or a mix of dark and white meat)
- 3-4 ribs of celery, finely chopped
- 1 medium onion, finely chopped
- 1 tablespoon poultry seasoning
- 1 large egg
- Salt and ground black pepper
- 2 cups chicken stock
- 2 cups stuffing mix
- 1 Tablespoon EVOO - Extra Virgin Olive Oil

- 1 egg
- 1/2 c. butter, softened
- 2/3 c. sugar
- 2 tbsp. milk
- 1 tsp. vanilla
- 1 c. all-purpose flour

- 1/4 tsp. salt
- 16 vanilla caramels, unwrapped
- 3 tbsp. whipping cream
- 1 1/4 c. finely chopped pecans

Puff Pastry Tomato Tarts

- 1 1/2 pounds large heirloom tomatoes, cored
- 2 teaspoons light brown sugar

- All-purpose flour, for dusting
- 1/2 pound chilled all-butter puff pastry
- 1/4 cup freshly grated Parmigiano-Reggiano cheese
- 2 tablespoons unsalted butter, cut into small cubes

- 1 lb. boneless beef top sirloin steak, cut into strips
- 1/3 c. Worcestershire sauce
- 1 medium onion, julienned

- 6 c. shredded lettuce
- 6 to 9 cherry tomatoes, halved

- 1/2 cup granulated sugar (about 2-1/2 ounces), plus 1/2 cup for coating
- 1-1/2 cups (7-1/2 ounces) unbleached all purpose flour
- 3/4 cup (3 ounces) Dutch processed cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon plus 1/8 teaspoon table salt
- 1/2 cup dark corn syrup
- 1 large egg white
- 1 teaspoon vanilla extract
- 12 tablespoons (1-1/2 sticks) unsalted butter, softened (70 degrees)
- 1/3 cup (about 2-1/2 ounces) packed dark brown sugar
- 4 ounces bittersweet chocolate, chopped into 1/2 inch pieces
