- 1/2 pound small potatoes, halved if large
- 6 sprigs thyme
- 1 corned beef brisket (about 3 pounds), plus pickling spice packet or 1 tablespoon pickling spice

- 16 even-sized open cup mushrooms, stalks cut level
- 3 tbsp corn or vegetable oil
- 75 g unsalted butter, softened
- 3 cloves garlic, chopped very finely
- 2 tbsp fresh thyme, chopped
- 1 1/2 tbsp lemon juice

Sugo is a long-simmered Italian sauce that often includes meats, such as pork or beef
- For the zasugo
- 5 lb. meaty bone-in beef short ribs
- 3 lb. bone-in pork shoulder
- Kosher salt and freshly ground black pepper
- 1/4 cup olive oil
- 2 medium onions, chopped (about 2 cups)
- 2 medium carrots, chopped (about 1 cup)
- 3 medium stalks celery, chopped (about 1 cup)
- 6 medium cloves garlic, coarsely chopped (about 2 Tbs.)
- 1 cup dry red wine
- 2 14-oz. cans diced tomatoes (28 oz. total)
- 1-1/2 cups lower-sodium chicken broth

- 2 bay leaves
