Pumpkin Pie

Preaheat oven to 375 Mix together creen cheese, brown sugar, cinnamon, salt
- 1 8 oz package cream cheese room temp
- 3/4 cup brown sugar packed
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1/2 tsp ginger
- 1/2 tsp ground cloves
- 3 eggs
- 1 cup canned pumpkin
- 1 cup milk
- 1 tsp vanilla
- Unbaked pie shell
- 1 cup sour cream
- 2 tbls sugar
Butter Chicken - (Murgh Makhani)

Perforate the chicken pieces with either fork tines or with little knife cuts
- 1 3⁄4 lbs boneless chicken breasts, cut into pieces
- 1 tablespoon yogurt
- 1 tablespoon vinegar or 1 tablespoon lemon juice
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon red chili powder (heat level of your choice)
- 1 small onion, minced into a paste
- 2 teaspoons ginger paste
- 2 teaspoons garlic paste
- salt, to taste
- sugar, to taste (I use a pinch only)
- 4 roma tomatoes, chopped
- 4 tablespoons butter
- 1 tablespoon fresh cream, whisked
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon red chili powder (heat level of your choice)
- 1 teaspoon black pepper
- 2 teaspoons finely chopped gingerroot
- 2 teaspoons green chilies
- 1 tablespoon cashews, to thicken (optional)
- salt, to taste
- 2 tablespoons melted butter (garnish)
- fresh cream (garnish)
- finely chopped cilantro (coriander leaves, garnish)
ORANGE SALAD, ROASTED BEET & GOAT CHEESE

Preheat the oven to 450 degrees
- 1 (4-ounce) red beet
- 2 navel or blood oranges
- 1 tablespoon olive oil
- 1 tablespoon white-wine vinegar
- 1 teaspoon Dijon mustard
- Coarse salt and freshly ground black pepper
- 2 (6-ounce) bunches arugula, stems trimmed
- 1 (5-ounce) log goat cheese, crumbled
Slow-Cooker Meatballs

Preheat oven to 425 degrees F
- 1/2 c. panko bread crumbs
- 2 oz. Parmesan cheese
- 1/3 c. chopped fresh flat-leaf parsley leaves
- 1/3 c. milk
- 1 large Egg
- 7 clove garlic
- 2 lb. 85-percent lean ground beef
- 1/2 lb. Italian sauage
- canola oil
- 1 medium Sweet onion
- 2 tbsp. olive oil
- 2 tsp. italian seasoning
- 1/4 tsp. red pepper flakes
- 1 can crushed tomatoes
- 1 can diced tomatoes
- 1 can tomato sauce
- 2 tsp. sugar
- 1 small bunch fresh basil
SAUTEED SHRIMP WITH PEPPERS AND BASIL

heat the oil in a non-stick skillet, add the garlic and saute for 10 seconds
- 1 tbsp. olive oil
- 2 cloves garlic, finely chopped
- 12 oz. shrimp, peeled and deveined
- 1 sm. onion, coarsely chopped
- 1/2 med. green bell pepper, cut into strips
- 1/2 med. red bell pepper, cut into strips
- 1/2 med. yellow bell pepper, cut into strips
- 2 tbsp. dry white wine
- Salt and pepper
- 1/4 c. chopped fresh basil
- 1 tsp. thyme
ROAST LEG OF LAMB WITH HERBS

Cut garlic into slivers and insert randomly into lamb, using point of sharp knife
- 1 leg of lamb (about 6 lbs.) not sirloin half
- Several lg. cloves of garlic
- 1/2 tsp. thyme leaves, crushed
- 1 tsp. rosemary leaves, crushed
- 1/2 tsp. salt
- 1 tsp. fresh ground black pepper
- 2 tbsp. flour
- 1/4 c. tarragon vinegar
- 1/4 tsp. oregano
- 1/4 c. water
- 1 lg. onion, quartered
- 1 carrot, sliced
- 1 stalk celery, sliced
- 1 c. dry red wine
- 2 tbsp. butter
- 1 1/2 tsp. flour
- 1/2 to 1 c. reserved liquids from roasting pan
- 1 can beef consomme, undiluted
- Dash of freshly ground pepper
- 2-4 tbsp. dry red wine
Boston Market Squash Casserole

Prepare corn muffin mix as directed, set aside to cool
- 4 1/2 cups zucchini (diced)
- 4 1/2 cups yellow squash (diced)
- 1 1/2 cup yellow onion (chopped)
- 1 box Jiffy corn muffin mix (prepare as directed on box)
- 3/4 cup butter
- 8 ounces Cheddar cheese
- 3 cubes chicken bouillon
- 1 teaspoon garlic (minced)
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon thyme
- 1 tablespoon parsley, chopped
Baked Buffalo Chicken Cheese Balls

- 2 1/2 cups shredded chicken (rotisserie chicken works great)
- 1/2 cup hot sauce (Franks)
- 1 3/4 cup grated cheddar (or sub your favorite cheese)
