Mini Corn Dog Muffins

1. Preheat oven to 400 degrees and grease a mini muffin pan
- Cornbread
- 1 1/4 cups flour
- 3/4 cups corn meal
- 1/3 cup sugar (or 1/2 cup if you want it sweeter)
- 2 tsps baking powder
- 1/2 tsp salt
- 1 cup milk
- 1/4 cup vegetable oil
- 1 egg, beaten
- 5 beef hot dogs, cut into 1 inch pieces
Chicken with Balsamic-Raisin Pan Sauce

Place the raisins in a small bowl and cover with boiling water
- Ingredients:
- 4 boneless, skinless chicken breast halves
- Salt and freshly ground black pepper
- 1/4 cup flour
- 1/3 cup golden raisins
- 3 tablespoons olive oil, divided
- 1/3 cup pine nuts
- 1 clove garlic, very finely chopped
- 1/2 cup low-sodium chicken broth
- 3 tablespoons balsamic vinegar
- 1 to 2 tablespoons fresh parsley, chopped (optional)
Baked Fontina Dip

Place oven rack in upper portion of oven, 5 inches from heat
- 2 lbs Italian fontina cheese, rind removed, cut into 1-2 inch cubes
- 1/2 cup extra virgin olive oil
- 8 cloves garlic, thinly sliced
- 1 1/2 tbs thyme leaves, minced
- 1 1/2 tbs rosemary leaves, minced
- 1-2 French baguettes, sliced
- Salt and freshly ground pepper, to taste
Pulled Pork - Shirley Style

Mix all ingredients together-except honey BBQ, and marinate pork shoulder in a plastic bag overnight in the refrige...
- 5 5 5 lb pork shoulder
- 1 1 1 tbsp each garlic powder, onion powder, salt & brown sugar
- 1/2 1/2 1/2 tbsp pepper
- 2 2 2 tbsp paprika
- 2 2 2 dashes liquid smoke
- 1 1 1 jar mustard BBQ
- 1 1 1 jar honey BBQ
BBQ Sauce - 1, 2, 3

Mix together in a pot and cook until
- 1 C Brown Sugar
- 2 C Ketchup
- 3 Shallots, copied
Antipasto Cheese Ball Christmas Tree

In a bowl combine all the ingredients for the dip and mix until the ingredients are well combined
- For The Decorations:
- 4 cups cream cheese, softened
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup red bell peppers (or capsicum ), diced
- 1/4 cup dill pickles, finely diced
- 1/4 cup chives, chopped
- 1/4 cup parsley, chopped
- 1 tablespoon onion powder
- 2 teaspoons garlic powder
- Salt, to taste (if desired)
- 1 1/2 - 2 cups pitted mixed olives (I use a variety of black, green and Kalamata olives) -- dried with paper towel
- 1/2 cup sun-dried tomatoes, chopped (dried with paper towel)
- Rosemary leaves/sprigs to decorate
- Ritz, water crackers or pretzels for serving
- Salami slices, for serving
- Prosciutto slices, for serving
One Pan Garlic and Herb Chicken and Asparagus

Season chicken with salt and pepper on both sides
- 3-6 chicken thighs or boneless skinless chicken breasts (breasts pounded to even 1/2 inch thickness)
- salt and pepper, to taste
- 1 pound asparagus, ends trimmed
- 3 tablespoons butter, divided
- 1 tablespoon minced garlic
- 1/2 teaspoon dried basil (see note)
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon onion powder
- salt and pepper, to taste
- fresh herbs for garnish (optional)

Tear the lettuce into large chunks and arrange on a plate
- 2 romaine lettuce hearts or 1 romaine lettuce head
- 1 egg yolk
- 2 - 3 tablespoons extra-virgin olive oil
- Juice of half a smallish lemon
- Few drops of Worcestershire sauce
- 3 tablespoons freshly grated Parmesan
- 1 cold, cooked whole chicken breast ; preferably grilled
- Half an avocado

- 1 tablespoon cornstarch
- 1 (15 ounce) can chicken broth
- 2 tablespoons olive oil
- 1 tablespoon garlic, minced
- 4 skinless, boneless chicken breast halves - cut into cubes
- 1 onion, sliced
- 1/2 green bell pepper, seeded and thinly sliced
- 1/2 red bell pepper, seeded and thinly sliced
- 1 (16 ounce) can diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/4 cup medium-dry white wine
- 1/2 cup freshly grated Parmesan cheese

1. With a mixer, combine cream cheese, cheddar, onion, salsa and cumin
- ◾16oz cream cheese, room temp
- ◾2 cups cheddar cheese, grated
- ◾3 tbsp minced onion
- ◾3 tbsp salsa
- ◾1 tsp ground cumin
- ◾2 cups nacho cheese chips, crumbled
- ◾top of 1 bell pepper for stem garnish
