- 3/4 cup mayonnaise
- 1/3 cup fresh basil, chopped
- 3 tablespoons Parmesan cheese, grated
- 2 tablespoons fresh chives, minced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 large eggplant,sliced into eight pieces
- 2 large sweet red peppers, cut into large pieces

- 1 1/2 cups seasoned breadcrumbs
- 1/4 cup melted butter
- 1/2 tsp garlic powder
- 1/4 cup parsley, chopped
- 1 small potato, peeled and grated
- 1/4 cup Parmesan cheese, grated
