1. In a small mixing bowl, dissolve yeast and sugar in warm water
- 1 (.25 ounce) package instant yeast
- 1 tablespoon white sugar
- 1/2 cup warm water (110 degrees F)
- 1/2 cup hot milk
- 1 tablespoon butter
- 1 egg
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1/4 tablespoon raisins for decorating
Tuna Melts

1. Preheat the oven to 375 degrees F
- 12 ounse can tuna
- 1/3 cup minced red onions
- 3 hard-boiled eggs, peeled and chopped
- 1 teaspoon minced garlic
- 2 tablespoons relish, drained
- 3/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup + 1 tablespoon mayonnaise
- 6 to 12 slices sourdough or other white bread
- 6 (1/4-inch) slices ripe tomato, lightly salted
- 6 (1-ounce) slices cheese
- 2 avocados, thinly sliced
- Dill pickle spears, for garnish
Savory Meat Loaf

1. Heat oven to 350°F. 2
- 1 1/2 pounds lean ground beef
- 1 cup milk
- 1 tablespoon Worcestershire sauce
- 1/4 teaspoon dried sage leaves
- 1/2 teaspoon salt
- 1/2 teaspoon ground mustard
- 1/4 teaspoon pepper
- 1 garlic clove, finely chopped
- 1 egg
- 3 slices bread, torn into small pieces, soaked in milk
- 1 small onion, chopped (1/4 cup)
- 1/2 cup ketchup, chili sauce or barbecue sauce
Chicken Marsala

POUND chicken breasts between sheets of plastic wrap until about 1/4" thickness
- 4 chicken breasts, boneless & skinless
- 1/2 cup flour
- Salt to taste
- Pepper to taste
- Dried oregano to taste
- 4 Tbsp oil
- 4 Tbsp butter or margarine
- 2 cups fresh mushrooms, sliced
- 1 cup Marsala wine
Mexican Casserole

1. Brown beef, chili powder (3 or 4 Tbsp), and onion together
- 1 lb ground beef
- 1 pkg chili powder
- 1 can Ro-Tel tomatoes
- 1 onion, chopped
- 1 pkg frozen corn tortillas, broken
- 1 can Ranch style beans
- 1 can cream of chicken soup
- 1 c grated cheddar cheese
Chicken Broth

1. To make the broth, rinse the chicken and place into a large pot
- 1 whole chicken
- 2 stalks celery
- 1 medium onion
- 2 small carrots
- 1 leek
- 1 tbsp Kosher salt
- 2 sprigs fresh thyme
- 1 small bunch parsley
- 1 bay leaf
- 1 tsp black peppercorns
Crawfish Casserole

1. Mix all ingredients except cheeses and pour into a large greased casserole
- 1 lb crawfish tail
- 1 (10 3/4 ounce) can French onion soup
- 1 (10 3/4 ounce) can cream of mushroom soup
- 1 (10 ounce) can Rotel tomatoes & chilies
- 1 1/2 cups uncooked rice
- 1/3 cup butter, melted
- 1/4 cup chopped bell pepper
- 1/2 cup chopped green onion
- 1/3 cup chopped fresh parsley
- 1 cup chopped celery
- salt and pepper
- 1/2 cup grated monterey jack cheese
- 1 cup grated cheddar cheese
Shrimp Noodle Bowl

1. To a large pot over medium-high heat, add all ingredients except noodles and shrimp
- 8 cups low-sodium chicken stock
- 2 cups frozen peas
- 2 cups frozen carrot slices
- 2 tablespoons toasted sesame oil
- 2 tablespoons soy sauce
- 2 tablespoons Szechuan stir-fry sauce (recommended: San-J)
- 10 ounces fresh yaki-soba or ramen noodles
- 1 pound cooked medium shrimp
Peach Cobbler

- 4 cups peeled, sliced peaches
- 2 cups sugar, divided
- 1/2 cup water
- 8 tablespoons butter
- 1 1/2 cups self-rising flour
- 1 tsp baking powder
- 1 1/2 cups milk
- Ground cinnamon, optional
