Brown meat and onions and drain
- 1 lb ground beef
- 1 large onion, chopped
- 1 (1 ounce) package hidden valley ranch dressing mix
- 1 (1 ounce) package taco seasoning mix
- 1 (16 ounce) can pinto beans
- 1 (16 ounce) can ranch style beans
- 1 (16 ounce) can cream style corn
- 1 (8 ounce) can diced rotel tomatoes
- 1 (8 ounce) can stewed tomatoes
- 1 can chopped green chili peppers
Texas Caviar

- 2 # 2 cans cooked, dried, black-eyed peas
- ½ to 1-cup salad oil
- 1/4 ¼ cup wine vinegar
- 1 clove garlic

- 1/2 cup of pine nuts
- 2/3 cup of extra virgin olive oil *canola oil can be substituted
- 1/2 cup of grated Parmesan cheese
- A pinch of salt and pepper to taste
Broccoli Soup with Blue Cheese

1. Melt butter in a medium pot over high heat
- 3 tablespoons unsalted butter
- 1 small onion, chopped
- 1 1/2 pounds broccoli florets
- 2 cups reduced-sodium chicken broth
- 1/2 cup crumbled gorgonzola cheese, divided
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 3/4 cup half-and-half
- 1/2 cup croutons
Pistachio Cake

Beat 4 minutes at medium speed
- 1 Duncan Hines White Cake mix
- 1/2 cup milk
- 1/2 cup cooking oil
- 1 cup water
- 5 to 6 eggs
- 2 boxes Royal Instant Pistachio Pudding Mix

- 1/2 pint whipping cream
- 1/2 smal container cool whip
- 1 box Royal Instant Pistachio Pudding Mix

- 1 Tablespoon smoked pepper sauce
- 1 teaspoon cumin
- 1 teaspoon olive oil
- 1 tablespoon garlic
Green bean and tomato salad

Steam green beans in 1/2 inch boiling water covered for 3 or 4 minutes
- 1 lb. fresh green beans, washed and trimmed
- sunburst tomatoes, halved
- grape tomatoes, halved (any small tomato will do; just add as many as you'd like)
- 1/4 c red onion, thinly sliced
Mocha Cinnamon Chocolate Chip Cookies

Heat the oven to 350 degrees
- 9 ounces (2 cups) unbleached all-purpose flour
- 1/2 ½ teaspoon baking powder
- 3/4 ¾ teaspoon ground cinnamon
- 1/4 ¼ teaspoon table salt
- 10 ounces (1 ½ cups) unsalted butter softened at room temperature
- 3 tablespoons instant espresso powder (or 4 tablespoons instant-coffee granules, crushed)
- 1 cup confectioners’ sugar
- 1/2 ½ cup packed light brown sugar
- 1 1/2 1 ½ cups semisweet chocolate chips
- 1/4 About ¼ cup granulated sugar for dipping

- 1 medium onion, chopped (1/2 cup)
- 1 medium green sweet pepper, chopped (1 cup)

- 2 tablespoons olive oil
- 1 pound uncooked ground turkey
- 3 tablespoons chili powder
- 1 tablespoon ground cumin
- 1/4 teaspoon cayenne pepper
- 1 15-ounce can black beans, rinsed and drained
- 1 14 1/2-ounce can diced tomatoes, undrained
- 1 cup bottled salsa
- 2 chipotle peppers in adobo sauce, chopped
- 2 16-ounce tubes refrigerated cooked polenta
- 2 cups shredded Pepper Jack cheese
- 2/3 cup chopped fresh tomato
- 1/4 cup snipped fresh cilantro
- 1/2 cup sour cream
