Orzo with Lemon, Garlic, Parmigiano & Herbs

Combine the lemon juice, garlic, and a generous pinch of salt in a small bowl and set aside
- 3 Tbs. fresh lemon juice
- 3 medium cloves garlic, finely chopped
- Kosher salt
- 3 cups low-salt chicken broth
- 5 Tbs. unsalted butter, cut into 5 pieces
- 1 lb. orzo
- 1/2 cup grated Parmigiano-Reggiano; more for sprinkling
- 1/4 cup chopped fresh flat-leaf parsley
- 2 tsp. fresh thyme leaves, lightly chopped
- Freshly ground black pepper

Preheat the grill to medium-high heat and spray with nonstick spray
- Nonstick cooking spray
- 5 slices bacon, chopped
- 1 shallot, finely chopped
- 1 teaspoon Dijon mustard
- 1/4 cup balsamic vinegar

Place the dried morels in a bowl and pour 2 cups boiling water over them
- 1 -ounce dried morel mushrooms
- 1/2 pound fresh porcini or cremini mushrooms

- 2 ounces pancetta, diced
- 1/2 cup chopped shallots (3 shallots)

Meatloaf with Fresh Scallions & Herbs

- 1 Tbs plus 1 tsp veg oil; more as needed
- 1 c finely chopped yellow ionion
- 3/4 lb ground beef (80% lean)
- 1/2 lb ground veal
- 1/2 lb ground pork
- 1 tsp paprika, preferably Hungarian

- 3 large eggs, lightly beaten; 1 more if needed
- 1 1/2 c homemade dry breadcrumbs or panko; or more
- 1 c thinly sliced scallions; both green and white parts

- 1/4 cup (1/2 stick) butter

- 1 1/2 teaspoons dried crushed red pepper
- 2 large Dungeness crabs, cooked, cleaned, and cracked (about 4 1/4 pounds)

- 2 tablespoons chopped fresh parsley, divided
- 1/2 cup blood orange juice or regular orange juice
