- 1/2 stick unsalted butter, softened

- 1 (24-inch) baguette, quartered crosswise, then each quarter halved horizontally and lightly toasted

- 1/2 stick (4 tablespoons / 2 oz) unsalted butter or vegetable shortening

- 20 chocolate sandwich cookies ground into crumbs in food processor
- 4 tablespoons melted butter
- 8 ounces cream cheese, softened 1/2 cup sugar
- 1 cup sour cream
- 8 ounces Cool Whip, thawed (or 1 cup whipping cream, whipped to stiff peaks with 2 tablespoons powdered sugar)

Grilled Cheese Tomato Soup Casserole

- GRILLED CHEESE SANDWICHES
- 16 slices sourdough bread
- 8 tablespoons (1 stick) butter, at room temperature
- One 5.2-ounce container of Boursin cheese (or other soft, spreadable cheese)
- 8 ounces fresh mozzarella cheese, sliced into 8 thick pieces

- 2 cups whole milk

- 1 1/2 teaspoons kosher salt
