John's Prawn Risotto

Char grill the capsicum and remove skin
- 2 leeks
- 50 g butter
- 2 cups arborio rice
- 6 cups fish stock, heated
- 500 g green prawns
- 1 capsicum
- 1 cup white wine
- Baby spinach and parmesan cheese to serve
Orange Almond Cake

- 2 onions, 1 sliced into rings the other chopped
- 2 Tblsp olive oil
- 1 medium carrot, diced
- 1 stick celery, diced
- 2 cloves garlic, chopped
- 400g can chopped tomatoes
- 1 1/4 cups dry white wine
- 1 1/4 cups chicken stock
- 1 strip thinly pared lemon rind
- 2 bay leaves
- Salt and Pepper

- 1 dstsp lemon zest

Curried Rice Salad

Place rice, onion, apple, celery, capsicum, pinenuts, sultanas in a large bowl
- 2 cups cooked long grain white rice
- 1 small red onion finely sliced
- 1 Granny Smith apple, cored and diced
- 2 celery stalks, finely sliced
- 1 small red capsicum. diced
- 1/4 cup toasted pinenuts
- 1/2 cup sultanas
- 1/2 cup olive oil
- 1/4 cup white wine vinegar
- 2 Tblsp brown sugar
- 1 Tblsp curry powder
- 2 cloves garlic, crushed
- 1 tsp dried ginger or finely grated fresh ginger
- Coriander sprigs to serve
