Lively Lemon Bundt Cake

1. Preheat the oven to 350 degrees
- Vegetable oil spray for misting the pan
- Flour for dusting the pan
- 1 package (18.25 ounces) plain lemon cake mix
- 1 package (3.5 ounces) instant lemon pudding mix
- 3/4 cup orange juice (or an orange and tropical juice combination)
- 1/2 cup vegetable oil
- 1 container (8 ounces) lemon yogurt
- 4 large eggs
- 1 teaspoon grated lemon zest

Lasagna in a single serving form, no more messy sloppy layered squares! I love these
- 4 Tbsp extra virgin olive oil, divided
- 1/2 lb lean ground beef
- 1/4 cup finely chopped yellow onion
- 1 (28 oz) can crushed tomatoes (I'd recommend Contadina Brand)
- 2 cloves garlic, minced
- 1/2 Tbsp dried basil
- 1/2 tsp dried oregano
- Salt and freshly ground black pepper, to taste
- 1 (15 oz) container Ricotta Cheese
- 1 large egg
- 1/3 cup fresh flat leaf parsley (aka Italian Parsley, its about 1 small handful), chopped
- 2 1/4 cups freshly grated Mozzarella Cheese, divided
- 3/4 cup freshly, finely grated Parmesan Cheese, divided
- 1/3 cup freshly, finely grated Romano Cheese
- 1/4 tsp salt
- 1/4 tsp freshly ground black pepper
- 12 uncooked lasagna noodles

- Beef, round steak, 1 lb bite sized pieces
- Bell Peppers, 1 cup, chopped
- onion, 1 medium diced
- Carrots, raw, 1 cup, diced
- Organic Diced Tomatoes, 1 can (about 15 oz)
- Enchilada Sauce, 2 cup
- Beans, black, 2 cup drained and rinsed
- Corn Tortillas, 10 medium (approx 6" dia)
- Sharp Cheddar, Low Fat, 2 cup,shredded
- Black olive slices, 1 small can
Chicken in Parmesan Chive Cream Sauce

Heat oil in a large skillet over medium-high heat
- 1 tablespoon olive oil
- 1/2 cup shallots, diced
- 3 cloves garlic, minced
- 2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
- 1 teaspoon dried thyme
- 2 bay leaves
- 1 1/2 cups heavy cream
- 1/4 cup Parmesan, grated
- 2 tablespoons chopped fresh chives
- Salt
- Freshly ground black pepper
- 1 cup rice, regular or instant, cooked according to package directions
Chicken Avocado and Monterey Jack Nachos

1. Pre-heat the oven to 350º F
- 1 large bag of corn tortilla chips
- 1 cup grated Monterey Jack cheese
- 2 cups grated Pepper Jack cheese
- 2 cups shredded cooked chicken
- 2 avocadoes, diced and peeled
- 2 green onions, sliced on the bias
- 1 jar tomato salsa or your home-made salsa
- 1 cup sour cream (optional)

- 1 can (12 oz.) evaporated milk
- 1/4 cup butter or margarine
- 1/2 tsp. salt
- 4 cups miniature marshmallows
- 4 cups (two 12 oz, bags semi sweet chocolate chips)
- 1 cup chopped pecans or walnuts
- 2 tsp vanilla extract
