Homemade Buffalo Wing Sauce

Cook all ingredients over medium-high heat until just starting to bubble
- 1/4 cup rice wine vinegar
- 2 tsp chili powder
- 1 tsp smoked paprika
- 1/2 tsp sweet paprika
- 2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp cayenne powder
- 1/4 tsp salt
- 1/2 tsp sugar
- 2 tsp canola oil
Harvest Grains Salad with Chili Lime Dressing

Start by cooking the grains
- For the dressing:
- 2 * 2 jalapeño peppers, seeded and minced
- 2 * 2 limes
- 1 * 1 teaspoon ancho chili powder
- 1/2 * 1/2 teaspoon ground cumin
- 1 * 1 tablespoon honey
- 1/2 * 1/2 – 3/4 cup extra virgin olive oil
- * Kosher salt
- To finish the salad:
- 1 3/4 * 1 3/4 cups water
- 1 * 1 tablespoon extra virgin olive oil
- 1 1/4 * 1 1/4 cups harvest grains blend (or you could use your favorite grain)
- 1 * 1 cup black beans, rinsed and drained
- 1 * 1 cup golden cherry tomatoes, quartered
- 2 * 2 tablespoons chopped fresh cilantro
- 1 * 1 tablespoon chopped fresh chives
- * Cucumbers (optional)
Wild Mushroom and Spinach Lasagna

Wash spinach leaves well in three changes of cold water; shake dry
- 5 pounds fresh spinach, stems removed
- 1 cup (2 sticks) unsalted butter
- 3 cloves garlic, finely sliced

- 3-1/2 lb de pierna de puerco
- 1 lb de lomo de puerco con costilla
- 7 oz de recado de achiote
- 1 taza de jugo de naranja agria*

- 12 tablespoons unsalted butter
- 1/2 cup minced shallots
- 1 head garlic, cloves peeled and minced (original recipe calls for 24 cloves Garlic Confit)
- 1 tablespoon plus 1 teaspoon minced thyme
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground white pepper
- 1/4 cup Dijon mustard
- 2 cups dry white wine
- 4 pinches of saffron threads
- 4 pounds small mussels
- 1/2 cup plus 2 tablespoons minced Italian parsley

- 1 lb linguine
- 3 tablespoons extra virgin olive oil
- 1/2 lb baby new potatoes, quartered
- 1 medium yellow onion, diced
- 1/2 red bell pepper, diced
- 1/2 green bell pepper, diced
- 1 tablespoons fresh thyme, minced
- 1 tablespoon unsalted butter
- 4 eggs plus 2 egg whites, lightly beaten
- 2/3 cup cheddar cheese, grated
- 1/2 lb bacon, cooked and crumbled
- salt and pepper to taste
Tuna Steak With Hibiscus Glaze

Boil the hibiscus in a liter of water for 15 minutes
- Six 8 oz. fresh tuna steaks, marinated in olive oil, lime juice, salt and pepper
- 3 1/2 oz hibiscus flowers
- 3 salad tomatoes, chopped
- 1/2 medium onion, chopped
- 3 garlic cloves, minced
- 1/2 c honey
- 1/4 c white wine vinegar
- 2 c demi-glace
- 3 rounds of pineapple, grilled and chopped
- 1 poblano chili, roasted, peeled and cut into strips
- 1 red bell pepper, roasted, peeled and cut into strips
- Lime juice
