ROASTED BABY ARTICHOKES

Once prepped, cut the larger artichokes in half, but if they are really small leave them whole
- 2 lbs baby artichokes
- 1/4 cup olive oil
- salt and pepper to taste
Italian Tuna Melts

The tuna melt is a decidedly American sandwich
- 3 tablespoons extra-virgin olive oil, plus more for brushing
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- Two 6-ounce cans Italian tuna in olive oil, drained and flaked
- 9 ounces marinated artichokes, coarsely chopped (1 1/2 cups)
- 1/2 cup pitted green olives, coarsely chopped (3 1/2 ounces)
- 1/2 cup thinly sliced red onion
- 1 1/2 tablespoons shredded basil
- Salt and freshly ground pepper
- 4 long ciabatta rolls or 1 long ciabatta loaf, split lengthwise
- 1 garlic clove
- 1/2 pound Robiola cheese or Brie, rind removed and cheese sliced
ZITI w/BUTTERNUT SQUASH

1. Cut squash into chunks, and place in food processor
- if the squash seems a little bland, add about a teaspoon of sugar. It will brighten the flavor considerably.
- 1 pound peeled and seeded butternut squash (start with a whole squash weighing about 1 1/2 pounds)
- Salt to taste
- 2 tablespoons butter or olive oil
- Freshly ground black pepper to taste
- 1 pound cut pasta, like ziti
- 1/8 teaspoon freshly grated nutmeg, or to taste
- 1 teaspoon sugar, optional

FOR THE MANGO BBQ SAUCE: Grill the tomato with the skin on until it is charred
- 3 large plum tomatoes
- 1 large mango, peeled and diced
- 1 medium onion, diced
- 1 teaspoon garlic, minced
- 1 small Jalapeno, seeded and diced
- 1/3 cup cider vinegar
- 1/2 cup dark brown sugar
- 2 tablespoons dijon mustard
- 1 teaspoon ground cumin
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 2/3 cup orange juice
- 1 tablespoon kosher salt
- 1 teaspoon freshly ground black pepper

- 1/2 tablespoon olive oil

- 1 cups freshly squeezed lemon juice (from about 8 medium lemons)
- 1 tablespoon lemon zest (from about 1 medium lemon)
- 1 cups simple syrup (made with equal parts sugar and water)
