Bailey's Irish Creme

A Deakin Favorite and part of my annual Christmas gifts to good friends!
- 1 can of condensed milk
- 3 eggs
- 1 cup of Irish Whiskey
- 1 teaspoon of coconut extract
- 1 teaspoon of instant coffee
- 1 Tablespoon of chocolate syrup
- 1 pint of heavy cream
Pulled Pork Barbecue with Hot Pepper Vinegar Sauce

- Rub
- 1 Tablespoon paprika
- 1 Tablespoon firmly packed light brown sugar
- 1 1/2 teaspoons chili powder
- 1 1/2 teaspoons ground cumin
- 1 teaspoon black pepper
- 1 teaspoon kosher salt
- 1/2 teaspoon ground cayenne pepper
- 1 boneless pork shoulder (Boston Butt), 4 to 5 pounds, rolled and tied
- Sauce
- 1 1/2 cups cider vinegar
- 2 Tablespoons sugar
- 1 teaspoon Tabasco Sauce
- Kosher salt
- Pepper
- Hamburger buns
Chicken Salad with Roasted Red Peppers

Dressed with roasted red peppers, olive oil, mustard, and garlic instead of the usual bland mayonnaise, this chicke...
- 2 teaspoons Dijon mustard
- 1 teaspoon white wine or sherry vinegar
- 1/2 garlic clove, minced
- 2 tablespoons extra virgin olive oil, plus extra, if desired
- 1/2 roasted chicken, skinned, meat removed from the bone, and roughly chopped (about 1 1/2 cups meat)
- 1 stalk celery, chopped
- 3 tablespoons chopped roasted red bell peppers
- 1 tablespoon chopped chives
- Kosher salt and black pepper
- Whole wheat bread or crusty white bread, for serving, optional
- Mixed salad greens, for serving, optional
Steak with Blue Cheese and Horeseradish Topping

Cream together the cheese and horseradish until well mixed
- 1/2 4.4 ounce Danish Blue Cheese
- 2-3 teaspoons creamed horseradish or horseradish sauce

Sausage Souffle

- 2 1/2 cups of any croutons
- 2 cups of sharp grated cheese (or more to taste)
- 1 1/2 lbs browned, drained breakfast sausage
- 4 eggs, beaten
- 2 1/4 cups milk
- 3/4 teaspoon dry mustard
- 1 can of cream of mushroom soup diluted with 1/2 cup milk
Bourbon-Glazed Chicken Drumettes with Blue Cheese Dipping Sauce

Melt butter in heavy large saucepan over medium-high heat
- 2 tablespoons (1/4 stick) butter
- 1 cup chopped onion
- 3 garlic cloves, peeled, thinly sliced
- 1 cup bourbon, divided
- 1 cup ketchup
- 1/2 cup hot pepper sauce (such as Crystal)
- 1/4 cup tomato paste
- 3 tablespoons (packed) golden brown sugar
- 30 chicken drumettes (about 4 pounds)
Veal Patties

- 1 1/2 lbs ground veal
- 1 cup dry bread crumbs
- 1 cup milk
- 2 beaten eggs
- 1 small chopped onion
- 1 Tablespoon minced parsley
- 1 Tablespoon minced celery
- 1 can of cream of mushroom soup
- 1 can of water
- 1 teaspoon curry (adjust to taste)
- Salt and pepper

- 1 box instant pistachio pudding
- 4 eggs
- 3/4 cup water
- 3/4 cup oil
- 1 small bag mini-chocolate morsels (semi-sweet)

Smoky Ricotta Fritters

These fritters are a typical snack in Puglia in Italy
- Ingredients
- 1 15-ounce container ricotta cheese, preferably organic
- 3/4 cup finely grated Pecorino Romano cheese
- 1/2 cup coarsely grated smoked mozzarella cheese
- 3 large eggs
- All purpose flour
- 1 cup (or more) finely grated Parmesan cheese
- Olive oil (for frying)

- If you can find it, buy a brand of ricotta cheese that has a strainer built into the container, which eliminates the need for draining. Look for smoked mozzarella at some supermarkets and at specialty
