Maple Walnut Fudge

This is a great fudge recipe
- 2 cups Packed Brown Sugar
- 5 oz. Evaporated Milk (Pet or Carnation)
- 1/2 Pound Butter
- 2 Cups Powdered Sugar (Confectioners')
- 1 Cup Walnuts
- 1/2 Tsp. Vanilla
- 1/2 Tsp Maple Flavoring
- 1/2 Tsp Walnut Flavoring (if desired)
Sausage and pepper baked ziti

Prep 20 minutes Cook 1 hour 5 minutes 1
- 1 lb sweet and/ or hot Italian sausage links, casings removed
- 4 cloves garlic, crushed with press
- 2 lg red, green, and/or yellow peppers, cut into 1/4 in. slices
- 1 jumbo onion (1 lb) cut in half, then cut crosswise into 1/4 in slices
- 1 lb. sliced white mushrooms
- 28 oz (1 can) whole tomatoes in puree
- 15 oz (1 can) tomato puree
- 1 tsp salt
- 1 lb ziti or penne pasta
- 8 oz (1 pkg) shredded part-skim mozzarella cheese
- 1/2 c. freshly grated pecorino Romano cheese
Pecan Pie

This is a Southern recipe that has been around for many years
- 2 9 Inch Pie Shells
- 1 Lb. Brown Sugar
- 1 Stick of Butter
- 4 Eggs
- 2 Tbsp. Corn Meal
- 2 Tbsp. Water
- 2 Tbsp. Vanilla
- 1 Pinch of Salt
- 2 C Pecans, Chopped
- 1/2 C Pecan Halves
Latin Style Beef

Prep 15 minutes Slow Cook 9 hours on low 1
- 1/2 c. drained sliced pickled jalapeño chilies
- 3 red, orange, and/or yellow peppers cut into 1/4 in. wide slices
- 2 cloves garlic, thinly sliced
- 1 lg. onion (12 oz) cut in half and sliced
- 1 tsp ground cumin
- 1/2 tsp dried oregano
- 1 bay leaf
- 1 tsp salt
- 2 beef flank steaks (3 1/2 lbs total)
- 14 1/2 (1 can) whole tomatoes in juice warm tortillas (optional)
Spicy Sausage Stuffing

This is a medium spicy stuffing that has become my favorite
- 14 Ounces of Herb Seasoned Stuffing
- 1 Large Onion, Diced
- 4 Stalks of Celery, Finely Chopped
- 1 Pound Hot Jimmy Dean Sausage, Browned
- 4 Ounces Mushrooms, Coarsely Chopped
- 2 Cups of Chicken Stock
- 1 Tsp of Crushed Sage
- 1/4 Tsp Pepper
