White Chocolate Covered Grapes with Orange Curd

Recipe by Michel Richard A fine layer of white chocolate gives both green and red grapes a creamy crunch
- Grapes
- 4 ounces white chocolate, chopped
- 1 tablespoon vegetable oil
- 1 pound green or red grapes, stemmed and chilled
- 2 tablespoons confectioners’ sugar
- Curd
- 2 cups fresh orange juice
- 4 large egg yolks
- 1/4 cup sugar
- 3 tablespoons unsalted butter, cut into 1-inch pieces
PASTA CARBONARA

I learned to make this at one of Max’s cooking classes at La Cucina
- 4 Strips bacon, chopped
- 1/2 Small onion, chopped (red onion is good for this)
- 3 Eggs (in these days of salmonella, I use Egg Beaters)
- 1/2 Cup grated Romano cheese
- 4 Sprigs parsley, chopped
- 1/2 Lb. spaghetti
ROAST BEEF DINNER

When I was growing up, Sunday dinners were always a little special
- 3 to 4 Lb. top of the round, or bottom round roast of beef
- Salt
- Pepper
- Garlic Salt
- 1/4 small onion, cut into 1” pieces
LIMONCELLO

This recipe comes from the Hotel Villa Brunello on the isle of Capri
- Two pounds lemons
- Four cups good quality vodka (Save the bottle & use for the limoncello)
CAJUN MAYONNAISE

Mix all ingredients until well blended
- 1 Garlic clove, diced
- 1 Cup mayonnaise
- 2 Tbs. chopped parsley
- 1 Tbs. Catsup
- 2 Tsp. Capers, drained & chopped
- 2 Tsp. Hot, spicy mustard
- 2 Tsp. Horseradish
- 1/2 Tsp. Dried tarragon
- 1/2 Tsp. Oregano
- 1/4 Tsp. Worcestershire
- 1/8 Tsp. cayenne pepper
STUFFED CABBAGE ROLLS

This is a very old Polish recipe going back to my great grandmother (paternal)
- 1 large head of cabbage
- 1 Lb. ground pork
- 1 Tbs. grated onion
- 1/2 Cup white rice, cooked in salted water
- Salt & Pepper
- 6 Whole allspice
- 1 Bay leaf
- Heavy cream
BOCCONE DOLCE

I always grumble when I have to make this cake - it’s a real pain in the neck
- 4 Egg whites
- Pinch of salt
- 1/4 Tsp. cream of tartar.
- 1 Cup sugar
- 6 Oz. semi-sweet chocolate morsels
- 3 Tbs. water
- 3 Cups heavy cream
- 1 Qt. fresh strawberries - Save about 6 for top layer, balance sliced
BUTTER BALL COOKIES

These cookies have been a standard of my Mother’s since I can remember, for all holidays, especially Christmas
- 2 Cups flour, sifted
- 1 Cup butter
- 5 Tbs. powdered sugar
- 1/2 Tsp. vanilla
- 1 Tsp. water
- Maraschino cherries
BAKED PINEAPPLE WITH BROWN SUGAR & KAHLUA

This is one of the best desserts for a casual get-together or a barbeque
- 1 Small pineapple, peeled, cored, sliced and cut into bite sized pieces
- 3 Tbs. Brown sugar
- 1 1/2 Tbs. Butter
- 1/4 Tsp. Cinnamon
- 3 Tbs. Kahlua
BEEF BOURGUIGNONNE

This is another recipe from the Vincent Price Cookbook
- 1 C diced salt pork or bacon
- 3 lbs. lean beef (preferably filet)
- 12 to 15 small pearl onions, or one medium onion cut into pieces
- 6 medium carrots, sliced
- 2 shallots, chopped
- 1 clove garlic, minced
- 2 TBS flour
- 1 pint, red wine
- 1 C beef stock
- 3 sprigs parsley
- 2 stalks celery
- 1 bay leaf
- Pinch of thyme
- 1/2 lb mushrooms, sliced
- 1 tsp lemon juice
