- 1 tablespoon of olive oil
- 1 pound veal stew meat cut into 1/2 inch cubes
- 1/2 can tomato paste (3 oz) more will make it more tomatoey
- 6 to 8 oz of water
- 1/4 cup Red Wine (optional)
- 1/2 onion diced
- Italian seasoning to taste (1 teaspoon)
- or add the seasons one at a time to taste

Marinated Pork Tenderloin

- 2/3 cup (2oz) crushed reduced-fat buttery crackers (e.g.Keebler Town House)
- 1/3 cup grated Parmesan cheese

•Prepare the veal by pounding thin between two sheets of wax paper
- 8 veal cutlets, pounded thin
- 1 cup of flour for dredging
- 1/4 tsp salt
- 1/4 tsp of fresh ground black pepper

- 1 Tbls of extra virgin olive oil
- 1/2 cup of chicken broth
- 1/4 cup of dry vermouth or white wine
- 1/4 cup of freshly squeezed lemon juice
- 1/3 cup of capers, drained and rinsed
- 1/3 cup of fresh parsley, chopped
CrockPot: Beef: Beef Stew and Savory Cauliflower

Throw it all in your crock pot, mix well, cook all day on low
- Garlic Beef Stew
- 1.5 – 2 lbs of grass fed stew meat
- 1 yellow onion diced
- 4-6 carrots diced
- 4-6 stalks of celery diced
- 6-12 mashed cloves of garlic (I used the jarred crushed garlic from TJ’s)
- palm full of ground marjoram
- sea salt and black pepper to taste
- 1 small can tomato paste
- splash of chicken broth
- Savory Cauliflower Mash
- 1 giant head of organic cauliflower steamed until soft
- big hunk of Kerrygold Irish butter
- palm full of turmeric powder
- sea salt and white pepper to taste
- Blend all ingredients in a food processor. I like to leave mine a little lumpy for texture.
Crock Pot Asian-Inspired Beef Ribs

1 Mix all ingredients except for ribs in crock pot
- 3 T. soy sauce
- 3 T. ginger, minced
- 3 T. garlic, crushed
- 2/3 cup hoisin sauce
- 3 T Worcestershire sauce
- 4 tablespoons brown sugar
- 1 1/2 t sesame oil
- 3 T instant minced onion
- 1 1/2 T five-spice powder
- 1/2 teaspoon cayenne pepper
- 3 1/2 lbs short rib of beef
