Pancakes with Blueberry Ginger Sauce

For the Pancakes: Combine all of the dry ingredients in a bowl
- For the Pancakes:
- 2 cups self-rising flour
- 2 tbs. sugar
- 1 egg
- 1 1/2 cups milk
- 3 tbs. canola oil
- Pat of butter for frying the pancakes
- Syrup
- Dollop of sour cream to top the pancakes
- For the Blueberry Ginger Sauce:
- 1 cup of frozen blueberries
- 1 inch piece of ginger – grated
- 1 cup of water
- 3/4 cup of sugar
- Zest of 1 lemon
- Juice of 1 lemon
- Zest of 1 orange

- 1/2 cup water
- 1/2 medium mango
- 1/4 cup soy sauce

- 1 tablespoon sesame oil
- main ingredients:
- 2 tablespoons sunflower oil or other veggie oil
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 1/2 tablespoon minced ginger
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped yellow or green bell pepper
- 2 ribs celery cut thin on the diagonal
- 2 to 3 cups broccoli florets (fresh or frozen)
- 8 ounces tempeh, cubed
- 1/2 mango thinly sliced
- cooked rice, for serving
