scallions, cut into ½" slivers
Add the oil to a wok and heat until very hot. Add the garlic and fry until golden (about twenty seconds); stir in scallions and tomato. Add the mushrooms and cook until softened (stirring constantly), about one minute. Add the cooked rice with the fish sauce and soy sauce, breaking up the rice with a wooden spoon; cook for approximately two minutes, stirring constantly. Turn the rice out onto a dinner plate and garnish with fresh coriander. Around the rice, lay a row of overlapping cucumber slices, a scallion, the tomato slices and one or two lettuce leaves with wedges of lime. (Recipe from "Seductions of Rice").
