  • 15 oz can Libby Pumpkin
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1/4 tsp Cloves
  • 1 tsp McCormick Valencia Orange Peel, optional
  • Streusel Topping: optional
  • 6 tbsp Brown Sugar
  • 2 tbsp Sugar
  • 1/4 cup Mini Chocolate Chips
  • Add a sprinkling of Cinnamon Sugar on top
  • Add 1/2 to 1 cup Raisins
  • Add 1/2 to 1 cup Mini Chocolate Chips
  • Add 1/2 to 1 cup Walnuts or Pecans, chopped

Preparation

Step 1

Pour the cake mix and spices into a medium size bowl.

Mix until the spices are incorporated.

Scoop the pumpkin into the bowl and stir. Don't worry, keep stirring, it will all be wonderful!

Drop with a scoop into a lightly greased muffin pan or into paper cups.

Now would be the time to mix the streusel ingredients, if desired. Sprinkle on top of muffins with a spoon and pat down a little with your fingers.

Bake at 350 degrees for 19-23 minutes.
