Ingredients
- 2 c. leftover black-eye peas,* drained
- 1/2 red onion, chopped
- 1 gr. bell pepper, chopped
- 3 gr. onions, chopped
- 1 clove garlic, minced
- 1 pint cherry tomatoes, quartered
- 4 oz of bottle zesty Italian dressing
- 1/2 - 1 tsp ground cumin
- 1/4 - 1/2 c. chopped fresh cilantro

Preparation
Step 1
In a large bowl, mix together black-eyed peas, onion, green bell pepper, green onions, garlic, tomatoes, zesty Italian dressing, and cumin. Cover and chill in the refrigerator approximately 2 hours. Toss with desired amount of fresh cilantro to serve.
