Peanut Butter Chocolate Chunk Blondies
Ingredients
- 6 tbsp Butter, softened
- 3/4 cup Peanut Butter, I used Jif Extra Crunchy
- 1 cup Brown Sugar
- 1 Egg, room temperature
- 2 tsp Vanilla Extract
- 1 cup White Whole Wheat Flour
- 1 tsp Baking Powder
- 1/2 cup Chocolate Chunks or Chocolate Chips
- 1/4 cup Peanut Butter Chips, for sprinkling, optional

Preparation
Step 1
In the bowl of a mixer, cream the butter and peanut butter until well blended. Add the brown sugar, egg and vanilla, mixing until just combined.
Add the flour and baking powder and mix until the dough forms.
I added about 1/4 cup of the chocolate chunks into the dough.
Spread into a greased/sprayed 8x8 baking pan. Sprinkle chocolate chunks on top and the peanut butter chips, if using.
Bake at 350 degrees for 20 to 25 minutes, or until golden brown and is almost firm in the center.
Let the brownies cool before removing from the pan. (Good luck with that!)
Remove from the pan and cut in to squares.
