Yield: 4-6 greedy servings
good medium size italian sausages (pork or mixed), chopped into smallish pieces
large carrots
bottle tomato passata
tbsp dried italian herbs
400g short pasta (any shape you like)
In a large pan, brown the beef mince and sausage pieces till browned. Remove from pan.
In the same pan, add the onions, carrots & celery and bay leaves. Saute till soft. Add in wine and stir till alcohol cooks off.
Add back the cooked mince mixture, and add in the tomato paste and cook down for 1 min.
Add in the passata (wash bottle out with a little water and add to sauce) and crushed tomatoes.
Stir well and add italian herbs and seasoning to taste.
Simmer till oil comes to the top of the sauce (for my dutch oven, it usually takes 30min, in my wok 40min)
Meanwhile cook the pasta to packet's direction.
Add cooked pasta to baking dish and cover with sauce and mix well (I always have extra sauce leftover)
Top with equal amounts of each cheese and bake in 190'C oven for 25min or till top is evenly browned.
Let it sit for at least 5min before serving, no sense getting sued for burnt roof of mouth from hot cheese.
