Chocolate cupcakes with cranberry juice as a secret ingredient. Surprisingly, they ended up tasting just like a chocolate donut. These cupcakes were my entry for Iron Cupcake: Cranberry.
Yield: 18 servings
Preheat oven to 325F/160C.
Mix dry ingredients together. Mix in cranberry juice and oil. Stir in lemon juice.
Pour into cupcake wells. Bake 20 min.
For icing, simply mix all ingredients together.
