Sweet Ginger Tofu 1 Picture

Ingredients

  • 1/4 C naturally brewed soy sauce
  • 1/4 C mirin
  • 1/4 C rice vinegar
  • 2 Tbsp light honey
  • 2 Tbsp minced gingerroot
  • 2 Tbsp light sesame oil
  • 1 tsp minced garlic
  • 1 lb firm tofu, rinsed, patted dry, and sliced 1/2-inch thick
  • Enough soba noodles for the number of people being served

Preparation

Step 1

1. Preheat oven to 350 degrees.

2. In a bowl, combine the soy sauce, mirin, vinegar, honey, ginger, oil, and garlic. Lay the tofu slices in a baking dish that can hold them in a single snug layer. Pour the marinade over the tofu.

3. Bake for 45 minutes, or until the tofu is nearly dry and well browned.

4. While tofu bakes, prepare soba noodles according to package directions.

5. Serve tofu over soba noodles.
