Ingredients

  • 1/2 cup butter
  • 3/4 cup packed brown sugar
  • 1/4 cup molasses
  • 1 egg white
  • 1 tablespoon peeled and grated fresh ginger
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 2 cups flour
  • 1 1/2 teaspoons baking soda
  • 1/4 cup sugar

Preparation

Step 1

Beat the butter until creamy. Gradually add brown sugar and molasses. Beat until fluffy. Add egg white, fresh ginger and ground spices. Slowly add the flour and baking soda to the butter mixture. Drop dough by rounded teaspoons into granulated sugar. Roll to coat. Place on ungreased baking sheets. Bake at 375 F. Seven minutes for chewy cookies. Eight for crunchy cookies. Cool on racks.
