Best Gluten-Free Chocolate Chip Cookies
After experimenting with my original recipe, I finally came up with this recipe that's my favorite so far. The cookies are soft and tasty! Perfect flavor and the millet flour makes them a little healthier, too :).
Ingredients
- 1/2 cup white rice flour
- 1/2 cup millet flour
- 1/3 cup tapioca flour
- 3/4 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 cup dark brown sugar
- 1/2 cup granulated sugar
- 3/4 tsp xanthan gum
- 1 large egg
- 1/2-2/3 cup chocolate chips (depending how many you like)
- 2 tbsp lowfat milk
- 3 tbsp melted butter
- 3/4 tsp vanilla extract

Step 1
Combine all flours, chocolate chips and xanthan gum with salt, baking soda and baking powder. All dry ingredients first.
Cream together melted butter, egg, both sugars and vanilla extract.
Mix wet ingredients with dry using a metal spoon. Add the milk, little by little. You can use your hands to mix the dough.
Use a tablespoon or cookie scoop to place cookies on cookie sheet. Do not flatten. Cookies won't spread much so you can bake them 1/2-3/4 inch apart in a preheated 350 degree oven for 13-15 minutes.
Let them cool for about 10 minutes before removing from cookie sheet (or they will fall apart). When you do remove them, use a spatula and slide the spatula underneath the cookies carefully.
