Ingredients

  • 1 400g tin of chopped tomatoes
  • 2 Medium onions, chopped
  • Vegetable oil
  • A thumb sized piece of fresh ginger, grated
  • 2 Cloves of garlic, crushed and chopped
  • 1-2 Green chillies chopped
  • 1 tsp Ground coriander
  • 1 tsp Ground cumin
  • 1/2 tsp Turmeric
  • A splash of water
  • 8 Skinless chicken pieces
  • Half a cup of plain yoghurt
  • Salt and pepper
  • Fresh lime and coriander leaves to finish.

Preparation

Step 1

Heat a large saucepan on the hob, add a splash of oil and the chopped onions and fry gently for 10 minutes.

Next add the garlic, ginger, chilli and spices to the onions and fry for a minute longer.

Add the water and tomatoes to the onion and spice mixture and bring to a simmer.

Now add the chicken pieces, stir them well into the sauce and continue to simmer for 30-40 minutes.

Finally stir in the plain yoghurt, season with salt and pepper, and add a squeeze of lime juice.

Serve on rice with a sprinkling of fresh coriander and lime wedges on the side.
