Ingredients
- 1 400g tin of chopped tomatoes
- 2 Medium onions, chopped
- Vegetable oil
- A thumb sized piece of fresh ginger, grated
- 2 Cloves of garlic, crushed and chopped
- 1-2 Green chillies chopped
- 1 tsp Ground coriander
- 1 tsp Ground cumin
- 1/2 tsp Turmeric
- A splash of water
- 8 Skinless chicken pieces
- Half a cup of plain yoghurt
- Salt and pepper
- Fresh lime and coriander leaves to finish.

Preparation
Step 1
Heat a large saucepan on the hob, add a splash of oil and the chopped onions and fry gently for 10 minutes.
Next add the garlic, ginger, chilli and spices to the onions and fry for a minute longer.
Add the water and tomatoes to the onion and spice mixture and bring to a simmer.
Now add the chicken pieces, stir them well into the sauce and continue to simmer for 30-40 minutes.
Finally stir in the plain yoghurt, season with salt and pepper, and add a squeeze of lime juice.
Serve on rice with a sprinkling of fresh coriander and lime wedges on the side.
