Ingredients

  • 3/4 cup Peanut Butter
  • 1 ripe Banana, mashed
  • 2 eggs or 1/2 cup egg substitute
  • 2 tsp Vanilla, or to your taste
  • 1 cup White Whole Wheat Flour
  • 1 cup Rolled Oats
  • 1/3 cup Brown Sugar
  • 2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 cup Milk Chocolate Chips, or chip of choice

Preparation

Step 1

In a bowl, mix peanut butter, eggs and vanilla. Stir until well blended.

In a separate bowl, mix flour, oats, brown sugar, baking powder, salt and chips.

Stir dry ingredients into the peanut butter mixture, stirring until just blended.

Scoop onto a parchment lined baking sheet.

Bake at 400 degrees for 12-15 minutes, or to desired doneness.

Note: I used a #16 scoop, approx. 1/3 cup.
Note: I baked mine 15 minutes because I like mine a little crunchy on the outside, soft on the inside.
