Steak pie

I was planning to make steak and kidney pie but had no kidneys! The result is this delicious steak and ale pie.
Ingredients
- 2 pounds of braising/stewing steak diced
- 2 tbsp of plain flour
- 2 large onions roughly chopped
- 2 large carrots roughly chopped
- 1 stick of celery roughly chopped
- 3/4-1 pint of dark beer or ale
- 2 bay leaves
- 3 tsp mixed herbs e.g. rosemary and thyme
- 3-4 tablespoons tomato ketchup
- 2 tsp balsamic vinegar
- splash of Worcestershire sauce
- Salt and pepper
- 1 pack of puff pastry

Preparation
Step 1
1. Toss the steak in the flour to coat.
2. Put a large casserole pan on the hob at full heat, add a splash of oil and brown the steak in batches (don't overcrowd the pan) remove the steak from the pan and set aside.
3. add the vegetables to the pan until they begin to soften.
4. One the vegetables have softened return the steak to the pan, then add the beer and all the remaining ingredients except the pastry.
5. Mix everything well, cover the pan and simmer very gently for about 3 hours or until the meat is tender.
6. Once cooked remove the bay leaves and pour the filling into a pie dish.
7. Roll out the puff pastry, cover the dish and crimp the edges (brush the edge of the pie dish with water to help the pastry stick).
8. Bake for around half an hour at gas 5/375f/190c or until golden brown.
9. Serve
