Flavored with paprika, garlic salt, and curry powder, these low-fat, oven-baked Sweet Potato Fries will make you forget the traditional ones!
Yield: 4 servings
lb sweet potatoes (cut into strips, with skin)
Preheat the oven to 425 degrees.
Line a cookie sheet with aluminum foil and coat with non-stick cooking spray.
Cut the potatoes into strips that are about ½ inch wide on each side.
Place the sweet potatoes into a sealable plastic bag. Add oil, salt, paprika, garlic powder and curry powder. Seal the bag and shake well to thoroughly coat the fries. Spread the potatoes out onto the baking sheet in a single layer.
Bake for 30 minutes, turning the tray arund every 10 minutes. Transfer to a dish lined with tissue paper to drain excess oil, if any.
Enjoy the delicious yet healthy and Baked Sweet Potato Fries with plain old ketchup or your favorite dipping sauce!

I cooked these last night and they were extremely delicious and easy to prepare. I think I’ll be making them all the time, now.
