Yield: 30 mini pies
peaches, blanched to remove skin, and diced
vanilla bean, split and scraped
recipe pie crust of your choice
heat all filling ingredients over medium-low heat until desired consistency.
cut pie crust into rounds and place 1 tsp of filling in the center, fold over and crimp edges. cut a small slit in the top of each hand pie for venting.
bake 10–15 minutes until golden brown at 350.
