Ingredients
- Filling:
- 2 cups rice flour mix
- 1 cup powdered sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 3/4 teaspoon xanthan gum
- 2 eggs
- 1/4 cup orange juice
- 2 TBSP melted butter
- 1/2 tsp vanilla extract
- 1/4 tsp rosemary
- 1/2 tsp salt
- 1/4 tsp lemon extract
- 1 cup berries
- 3 1/2 TBSP water
- 1/2 TBSP corn starch
- 3 TBSP powdered sugar

Preparation
Step 1
Preheat oven to 350
For Cookies:
Combine flour mix, powdered sugar, baking powder/soda, rosemary and salt in a bowl. Sift with fork.
Combine eggs, orange juice, lemon extract, melted butter, vanilla extract in another bowl.
Mix ingredients from both bowls together.
Refrigerate for 20 minutes
While dough is in refrigerator, prepare filling.
In a sauce pan, combine berries and water. Bring to a low boil. Mash berries with potato masher and mix in powdered sugar. Turn off flame. Slowly mix in the corn starch when berry mix is somewhat cooled. Set aside.
To prepare cookies, use a measuring 1/2 tsp to make a small indentation in the center of the cookies. Add filling.
Bake at 350 for 10-11 minutes, let cool for 5 minutes before serving.
