Almond butter, chopped bananas, and honey sweeten this simple gluten-free dessert that taste like something a grandma would make. Perfect with tea or even sprinkled into a bowl of warm oatmeal.

Ingredients

  • 1 1/4 cups rice flour mix
  • 3 TBSP honey
  • 1/4 cup melted butter
  • 3 TBSP almond butter
  • 1/2 cup brown sugar
  • 1/4 cup refined sugar
  • 1 egg
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 tsp baking soda
  • 1/4 cup rice milk
  • 1 TBSP canola oil
  • 1 whole chopped banana
  • cinnamon and sugar for sprinkling

Preparation

Step 1

Combine egg, honey, butter, almond butter, brown and white sugars in a bowl. Mix in the rice milk and canola oil, set aside.

Combine flour, cinnamon, almond meal, baking soda, and salt. Combine. Slowly mix in the wet ingredients.

Chop up a small banana into little cubes. Mix banana cubes into batter.

Pour batter into a muffin pan, should fill 9 spots. Sprinkle tops with cinnamon/sugar. Bake at 350 for about 20 minutes. Centers will sink, that's fine.

When still warm, spoon out the baked pudding mixture in each muffin compartment and place the pudding in a large container or bowl.

Sprinkle with cinnamon and sugar or a simple glaze.
