Wheat Berry Waldorf Salad 1 Picture

Ingredients

  • 1 cup wheat berries
  • 1 cup hot water
  • 2 cups cold water
  • 1/2 cup chopped walnuts
  • 1 medium apple, unpeeled, cored and chopped
  • 1/2 cup raisins
  • 1/2 cup chopped parsley (I omitted this)
  • 2 tablespoons apple cider vinegar
  • 1/4 cup apple juice
  • 1/2 tablespoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon lemon juice

Preparation

Step 1

1. Soak the wheat berries in 1 cup of hot water for at least one hour.

2. Drain, and cook in rice cooker with 2 cups of water. When rice cooker turns off, fluff wheat berries.

3. Remove wheat berries from rice cooker and scoop into a large bowl. Allow to cool.

4. Mix remaining ingredients into wheat berries thoroughly. Add more salt if necessary, and serve.
