Ingredients

  • Dressing:
  • 5 or 6 slices of bread
  • 1/4 c. olive oil
  • 1/4 c. lemon juice
  • 1/4 c. Dijon mustard
  • 1/4 c. fresh basil
  • 2 cloves garlic
  • Salt & pepper
  • 8 chicken thighs or drumsticks

Preparation

Step 1

Heat the oven to 400 degrees. Tear bread in small pieces. Process the bread in a food processor until crumbs form.
Dressing: Wipe any bread crumbs from processor. Put in oil, lemon juice, basil, mustard, and garlic. Process until basil and garlic are finely chopped. Season the dressing to taste with salt and pepper. Place chicken in a baking dish. Pour dressing over chicken, rubbing into both sides. Pat a thick coating of crumbs on both sides of chicken. Bake uncovered about 1 hour until juices run clear when pierced.
