Tilapia with Tomatillo Sauce

Ingredients
- 4 fillets Tilapia
- Salt & pepper
- 1 tsp cumin
- 1/2 tsp sweet paprika
- 2 tbs olive oil
- Juice of 1/2 lime
- 1/2 red onion
- 1 jalapeno, finely chopped
- 2 cloves garlic, finely chopped
- 8 to 10 tomatillos, peeled and diced with juice
- 1/2 c. white wine
- 2 tbs chopped cilantro

Preparation
Step 1
Sauté the onion, jalapeno and garlic in 1 tablespoon of olive oil for 2 minutes. Add the tomatillos. Season with salt and pepper, and sauté another 2 minutes. Add the wine and juice from ½ of the lime, bring to a boil. Reduce heat to low and simmer 5 minutes.
Season the tilapia on both sides with salt, pepper, cumin, and paprika. Sauté or grill the tilapia for 3 minutes on each side. Transfer to serving plate
Add cilantro to sauce. Adjust salt and pepper, to taste. Spoon the tomatillo sauce over the fish and garnish with sprigs of cilantro.
